I’ve officially dubbed this the season of apples. All the juicy, tart, slightly sweet apples that bake so well into pies, crisps, cupcakes, and now muffins!

These aren’t just any muffins either. These are the muffins you won’t be able to get enough of, the ones that bring a twinge of nostalgia as well as overwhelming joy while eating them.

Yes, I said overwhelming joy. It’s real, my friends.

Growing up, as this 90s-child has mentioned before, there was a lot of boxed muffin mixes in my life. And I loved them. Especially the ones with the little cans of fruit – usually blueberry, but sometimes apple.

I really thought it was the greatest thing, a cute little can to open, full of cute little fruit pieces that were so delicious to bite into while eating a warm muffin. Well, now it’s probably pretty obvious that this food blogger rarely cooks anything from a box (I will not mention the stress-eating-mac-and-cheese nights). That doesn’t mean I don’t still crave warm, cinnamon filled apple muffins with little bits of apple spread throughout though.

Solution: homemade Apple Cider Struesel Muffins.

If you love a fruit in your muffins, you’re going to love these. I honestly hadn’t set out to make a childhood favorite recipe. I was making the Apple Cider Cupcakes with Bourbon Cream Cheese Frosting, actually.

One bite of the frosting-less cupcake though and I was immediately 8 years old again, watching Saturday morning cartoons with a plate of warm apple muffins. And I KNEW I had to also turn the recipe into muffins. It was fate, it had to happen.

I’ve only made them about 82 times since I first tested them three weeks ago.

The choices! This is what it comes down to: what do you want? Do you just enjoy biting into a crispy streusel on top of your muffins? You won’t regret choosing this super cinnamony streusel all by itself.

Love a drizzle on your muffins? Especially an apple cider drizzle? Go ahead and skip the streusel, the drizzle is spot on.

Want to really indulge over a lazy weekend morning breakfast watching the leaves snow, fall?! DO BOTH! It’s the ultimate treat and you won’t regret it.

If you’re trying to be more sugar conscious, the muffins are perfectly delicious by themselves. Still sweet enough, with a moist, tender crumb and again, those apple pieces!

Apple Cider Streusel Muffins

Description

Moist, tender-crumbed muffins made with apple cider, cinnamon, and apple pieces – they’re easy to make and satisfy your fall breakfast craving!


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 cup white sugar
  • 1/4 cup brown sugar
  • 1/2 cup (1 stick) unsalted butter, melted
  • 2 eggs, room temperature
  • 1/2 cup apple cider
  • 1 teaspoon vanilla
  • 1 small (~3/4 cup) Honeycrisp apple, small dice (1/4 in.)

CRUMBLE:

  • 1 1/2 TBSP butter, melted
  • 1/4 cup all-purpose flour
  • 1/4 cup brown sugar
  • 1 teaspoon cinnamon

DRIZZLE:

  • 2/3 cup powdered sugar
  • 3 teaspoons apple cider

Instructions

  1. Preheat oven to 350°F and line 12 muffin tins. If making the crumble, stir together the crumble ingredients: butter, flour, brown sugar, cinnamon and set aside. Stir together dry ingredients in a mixing bowl: flour, baking soda, baking powder, salt, cinnamon, and sugars. Set aside.
  2. Whisk together melted butter (slightly cooled so it doesn’t cook the eggs), eggs, apple cider, and vanilla. Stir the wet ingredients into dry until mostly combined. Stir in diced apples until just combined. Don’t overmix!
  3. Fill muffin tins about 3/4 full. Top with streusel, approximately 1 1/2-2  teaspoons on each muffin. Bake for 18-22 minutes, until the internal temperature reaches 195-200°F.
  4. If adding the apple cider drizzle, stir together powdered sugar and apple cider, you may want to add more or less apple cider depending on desired consistency. Drizzle on slightly warm muffins.

Notes

You can use whatever apple type you want, you just want to lean towards using good baking apples so it doesn’t get mushy during baking.
